Zhonghe Concoction also called Zhonghe Soup, is a well-known dish from Qimen county, Huangshan city. As a famous dish of Anhui cuisine, Zhonghe Concoction is an important part of people's life in Anhui province. It is known for its fresh taste and strict requirements for ingredients. Since the shrimp in the concoction is from Zhonghe River, it is named as “Zhonghe Concoction”.

Zhonghe Soup  is clear, delicious, tender and not greasy. It is moderately thick and suitable for all ages. Qimen people always have Zhonghe Tang as their first dish at banquets. 

Zhonghe Soup is to cut white bean curd into very small and square pieces, put oil into the pot first, when the oil is hot, quickly put the prepared small pieces of bean curd into the pot, put water, add boiling, and then add the original half cooked ingredients, winter bamboo shoots (in the shape of powder), mushrooms (in the shape of powder), shrimp, spiced dried tofu (in the shape of powder), and other auxiliary ingredients, boil for about 5 minutes, and start the pot. Then put it into a bowl and add a small amount of chopped scallions. This way, a delicious neutralizing soup is completed.
