Biangbiang noodles are a traditional Han style noodle dish from the Guanzhong region of Shaanxi Province, named after the sound of Biang and Biang during the production process.When making, flour is ground from Guanzhong wheat and hand pulled into long and wide noodles. Soy sauce, vinegar, monosodium glutamate, Sichuan peppercorns and other seasonings are added to the noodle soup. The noodles are then scooped in and topped with hot vegetable oil.

Qinzhen Liangpi is made of an indica rice. The production process includes soaking rice, grinding and steaming. Rice crust is usually eaten cold, so it is also called Liangpi.
