Kaili Sour Soup Fish(凯里酸汤雨) is a specialty snack in Kaili City, Qiandongnan Miao and Dong Autonomous Prefecture, Guizhou Province. It is a "Guizhou specialty dish" and is mainly made from sour soup, fish, scallions, and other ingredients. Most of the fish used are locally produced rice carp, catfish, and grass carp. The best way to make sour soup is to naturally ferment rice soup as the soup base, and boil it with various seasonings such as ginger seeds, pickled tomato sauce, and pickled chili peppers.
In 2021, the production technique of Kaili Sour Soup Fish was successfully included in the fifth batch of representative projects of national intangible cultural heritage.
