Guilin Rice Noddles

Guilin rice noodle is one of the top ten traditional delicacies in Guilin. Its workmanship is exquisite, and the taste is round, smooth, and flexible. Guilin rice noodle is the most exquisite in the production of brine. Its process varies from family to family. It is roughly made of pig, beef bone, siraitia grosvenorii and various condiments, with a strong flavor. 

According to legend, during the Qin Dynasty (221BC-208BC), Emperor Qin Shi Huang ordered the excavation of the Lingqu Canal in Xing'an County, Guilin. When soldiers from the north came to Guilin and fell seriously ill, the locals used Chinese herbal medicine to boil it into brine and decoct it into an epidemic prevention soup, which these soldiers could take to solve the problem of not being adapted to the local environment. 

Since that time, for the sake of health care, after the improvement and processing by the master who sells Rice noodles on behalf of others, it has become a brine with unique flavor, and is used as a must for soup in Guilin rice noodle.
